Persica vulgaris) are the fruit of a tree belonging to the family Rosaceae, subfamily Prunoideae, has come down to us from Persia, hence the botanical name Prunus persica. The tree is native to China where it was considered a symbol of immortality, and whose flowers have been celebrated by poets, painters and singers. The tree reaches a modest size of up to 7 to 8 meters.The flowers, 5-petaled, colored in more or less intense pink. The leaves are lanceolate, narrow, serrated. Fruits are fleshy, roundish drupes, longitudinally furrowed on one side, covered with a tormenting red\/yellow skin. The flesh is succulent, with a more or less sour sugary flavor, white, yellow or greenish in color.
