Its name comes from the local dialect term \u201ctuma\u201d, which refers to the \u201cfalling\u201d of the casein during coagulation. Although the name means \u201csmall toma,\u201d the two cheeses share no characteristics other than their regional origin.<br \/>Tomino appears as a small, white, fresh disc with a soft, crumbly texture and a sweet, delicate, and slightly tangy flavour.  <\/p>\n","protected":false},"excerpt":{"rendered":"<p>From the Langhe tradition comes our truffle tomino, carefully aged and immersed in flavoured olive oil.
