Amaretto apricots

Amaretto apricot jam is a true Piedmontese specialty and tradition, combining the natural sweetness of ripe apricots with the distinctive aroma of amaretti biscuits. This combination creates a jam with a refined, enveloping flavor, ideal for those who love authentic, rich flavors. It is a great dessert to enjoy by the spoonful. Perfect for spreading on toast or crostini, this jam pairs beautifully with aged cheeses such as Pecorino or Parmigiano Reggiano, and can be used to enrich cakes and tarts, adding a touch of Piedmontese tradition to your recipes.

Varietal characteristics

Apricots (Prunus armeniaca L.) are the fruits of a tree belonging to the family Rosaceae, subfamily Prunoideae, genus Prunus. Their origin is uncertain, with three main areas of distribution: China, Central Asia and the Iranian-Caucasus region. In China, the tree has been cultivated for more than 4,000 years, and its introduction to Europe was thanks to the Romans. The plant can reach 10-11 meters in height, but inItaly it is usually cultivated using the “sapling” method, limiting the height to 2.5-3 meters. Method also used on our farm. The flowers of the apricot tree have five petals with a white color tending to pink, while the leaves are elliptical with sharp points and a serrated edge. The round-shaped fruits have a reddish-yellow skin and succulent flesh, rich in vitamin A. Apricots are delicious to enjoy freshly picked, but they lend themselves equally well to storage and processing, allowing them to be enjoyed out of season.
