Antipasto piemontese

Our Piedmontese antipasto consists of a mix of fresh vegetables: green beans, carrots, peppers, spring onions, cauliflower and celery – in varying proportions. The vegetables are simply washed carefully and placed in jars with wine vinegar, without any further processing. This simple and authentic method preserves the natural flavour of the vegetables, giving the dish a fresh taste and crunchy texture. Traditionally served as a starter, this Piedmontese appetiser is also ideal as an accompaniment to cold cuts: its acidity enhances richer flavours, creating a pleasant balance. Thanks to its versatility, it is perfect for any occasion, whether for everyday meals or special lunches.

The origins of the Antipasto Piemontese (verdure in agro) date back to a time when food preservation was essential for getting through the winter months. Piedmontese families used the abundance of summer vegetables to prepare preserves that would last a long time. The technique of preserving in vinegar allowed the nutrients in the vegetables to remain intact, as well as giving them a distinctive, slightly sour flavour.

Green beans, carrots, sweet peppers, onions, cauliflowers and celery in var. prop., wine vinegar (contains sulphites), salt.
