Strawberry Compote

The strawberries are picked when fully ripe in our fields in late spring, when they release their full aroma and naturally sweet flavour. Processing takes place within a few hours of harvesting, directly in our workshop in Alba, to best preserve their freshness and organoleptic properties. The process is simple and natural: the strawberries are cooked slowly without adding sucrose, but with alternative, natural ingredients. We do not use pectin or preservatives, to offer a compote with an authentic and genuine taste. The quality is guaranteed by the high quantity of fruit used: to obtain 100 grams of compote, we use 210 grams of fresh strawberries. A concentrate of flavour that celebrates the goodness of natural fruit. Strawberry compote is ideal for breakfast, spread on toast or paired with plain yoghurt and cereal. It is also perfect for filling cakes, tarts and pancakes, or for accompanying fresh and delicate cheeses such as ricotta and mascarpone, creating a natural and irresistible sweet and creamy contrast. A versatile compote, designed to enhance every moment of the day with the true taste of fruit.

Varietal Characteristics


The strawberry (Fragaria vesca) is the fruit of a perennial plant native to alpine areas of Europe, Asia and the Americas. Belonging to the Rosaceae family, this fruit is known for its intense fragrance and sweet taste, growing wild in forests. Interestingly, the strawberry is a false fruit, as it is the enlarged receptacle of an inflorescence. The strawberry plant reproduces not only through seeds, but also vegetatively through stolons, side branches that root and form new heads, clones of the mother plant. The wild strawberry, the progenitor of the modern strawberry, is still widespread in our forests with its small, highly aromatic fruits. Strawberry cultivation dates back to the 18th century in France, started by a gardener for the Sun King who selected larger and hardier varieties of strawberries. Strawberries grown until the 18th century were derived from European and North American species, but later they were hybridized with South American varieties, from which all modern varieties are descended.
