Peach Compote

Our peach compote is born from a passion for quality fruit and Piedmontese artisan tradition. We use only nectarines, grown in our orchards located in the fertile lands of Alba, where the mild climate and generous soil give the peaches an intense and unmistakable flavour. The nectarines are hand-picked at the ideal moment of ripeness and processed in our workshop a few hours after harvesting to preserve their freshness, aroma and nutritional properties. Our compote is made without added sucrose, but sweetened with a small amount of fructose, which enhances the natural sweetness of the peaches without masking their authentic flavour. For every 100 grams of compote, we use 185 grams of fresh peaches, thus guaranteeing a product rich in fruit and with a genuine flavour. The result is a soft, fragrant and naturally sweet compote, reminiscent of homemade preparations of the past. Perfect for spreading on toast, perhaps with a touch of mountain butter, or to enjoy with yoghurt, fresh cheeses or as a filling for cakes and tarts. Each jar tells a story of care, territory and tradition: a simple, delicious and authentic product, just like in the old days, designed for those who seek true flavours and essential ingredients.

Varietal Characteristics

Peaches (Prunus persica var. Persica vulgaris) are the fruit of a tree belonging to the family Rosaceae, subfamily Prunoideae, has come down to us from Persia, hence the botanical name Prunus persica. The tree is native to China where it was considered a symbol of immortality, and whose flowers have been celebrated by poets, painters and singers. The tree reaches a modest size of up to 7 to 8 meters.The flowers, 5-petaled, colored in more or less intense pink. The leaves are lanceolate, narrow, serrated. Fruits are fleshy, roundish drupes, longitudinally furrowed on one side, covered with a tormenting red/yellow skin. The flesh is succulent, with a more or less sour sugary flavor, white, yellow or greenish in color. The peach has a typical pulpy and juicy texture that is due to its high water content.
