Adzuki rossi (Vigna angularis)

After harvesting, we dry them and pack them by hand into jars or bags. Before cooking, we recommend soaking them for at least 6 hours, preferably overnight. Adzuki beans are perfect for light dishes, excellent in soups, salads, vegetable burgers or even in sweet recipes, such as traditional Japanese red bean cream. They go well with whole grains, delicate spices and seasonal vegetables.

We cultivate red adzuki beans with care and respect for the land, selecting light, well-drained and sunny soils. This variety originates from Asia and is now increasingly appreciated here too for its nutritional properties and delicate, slightly sweet flavour. The seeds are small, oval and bright red.
We sow them in spring and harvest them when fully ripe to ensure quality, aroma and long shelf life.
