Description
With Madernassa Pears grown in our orchards in Alba and in the Langhe hill, we obtain this particular fruit appetizer that we christened with a fancy name: “El Paisanot”.
This appetizer of fruit with apple cider vinegar comes in with the diced pear Madernassa for ease of use in the kitchen.
It ‘s a great unusual but mainly flat entry, it may be served in a variety of ways and combined with other ingredients to be enjoyed to the fullest.
It can serve simply with Parmesan cheese, enhancing in this way all the characteristics of appetizer and quick to make sure impact of taste, with more elaborate dishes such as shrimp cocktail in cocktail sauce and a salad of white beans , parsley, salt and pepper.
It also combines well with all meats and main course when served with diced vegetables steamed. It ‘s good to use in the appetizers.

Varietal characteristics
The Madernassa Pear is a variety named thanks a small village of Vezza d’Alba, a town very close to Alba, the capital of the Langhe and Roero outside (the location is very close to Azienda Agricola Prunotto Mariangela, about 3 km).
The plant-mother, grew up on a farm owned by Gavello farm, was pulled down in 1914, when he was 130 years old, a trunk circumference of m. 2.60 and a productivity even above 25 tons.
It is believed that this cultivar is derived from a natural cross of Martin sec with the wild. And, in fact, there are few differences. The culture of the board of the pear Madernassa has a major presence in the kitchen autumn and winter.
The tree is vigorous, rustic, very fertile, subject to alternation in the old manufacturing plants.
Flowering in a medium-early. Parthenocarpic variety (also produced seedless fruits).
Way of production
The entire production process is done manually.
The freshly picked fruit is selected, washed, cored, and carefully placed by hand in the jar.
