Welcome back, January!
The month when we start again, make good resolutions… and keep writing last year’s date. It’s a slightly suspended moment, when our minds are still lingering over holiday lunches and dinners, but our hearts are trying to get back on track.
Some would happily choose another bagna cauda, maybe without garlic for the less daring (but still curious), while others opt for a warm, simple soup made with our beans, dried or ready to use.
And then there’s the true star of January: arrabbiata sauce. A bold sauce that warms you up and gives you the right boost to face a new year full of experiences.
Meanwhile, at Azienda Agricola Mariangela Prunotto, there’s something that never stops: our fields and our plants. January is cold and quiet, but far from still. This is exactly when we begin preparing for flowering and, above all, it’s time to prune. An ancient and essential gesture that requires patience, an expert eye, and respect for the plant. Pruning means taking away today to give more tomorrow: this is how a plant is prepared to produce healthy, generous fruit.
It’s a technique passed down through generations in our family, because we know that behind every good harvest there is always time, knowledge, and a great deal of love for the land.
