Antipasti and vegetables in oil

Grilled artichokes

Our grilled artichokes are a versatile and flavourful artisanal product. After thorough cleaning, we cook them slowly over charcoal, with patience and care, to achieve the perfect doneness. Once ready, we preserve them in extra virgin olive oil with aromatic herbs, which enhance their aroma and flavour. Thanks to the quality of the raw ingredients and traditional preparation methods, we offer an authentic product rich in character. Perfect as an appetiser, accompanied by rustic bread and a good glass of wine, they also make a great side dish for meat or fish dishes. Excellent in salads, omelettes, or as a special ingredient in pasta and risotto, they always add a refined and delicious touch to the table.

Varietal characteristics

The artichoke plant is distinguished by its broad, thorny leaves and its tender, flavourful heart. In the countryside around Alba, artichokes find fertile soil and a favourable climate that promote their natural development. They are cultivated with care and passion, following agricultural traditions handed down through generations, which enhance every stage of the process and guarantee a quality product.
The preparation of our grilled artichokes begins with a careful selection of the best specimens, harvested between March and May, when artichokes are at their peak of freshness and flavour.
After harvesting, the artichokes are cleaned by hand, removing the toughest leaves and thorny tips to obtain only the tender hearts. These are then grilled over charcoal, a slow cooking method that gives them an unmistakable smoky aroma and enriches their flavour.

Artichokes 62%, extra virgin olive oil, wine vinegar (contains Sophites), aromatic herbs.
