Varietal Characteristics
The raspberry and cocoa cream jam begins with the selection of the best raspberries, carefully picked in the fields in the early hours of the morning. The raspberries, chosen for their freshness and ripeness, are taken to the artisan workshop where the transformation process begins.
In the workshop, the raspberries are washed and carefully selected to remove any imperfections and then cooked with cane sugar, which sweetens and intensifies the fruity flavour. At this point, the special ingredient comes into play: cocoa. Unsweetened cocoa is added gradually, infusing the purée with its rich and complex flavour, creating a symphony of flavours that combines the freshness of raspberries with the depth of chocolate.
