Porcini mushrooms harvested in Piedmont are one of the region’s most authentic and prized delicacies. Thanks to the richness of Piedmont’s forests, which offer an ideal environment among oak, chestnut and pine trees, porcini mushrooms have a variety of unique characteristics: fleshy caps ranging in colour from light brown to deep brown, sturdy, firm stems, and an unmistakable, intense, earthy aroma. Piedmontese tradition dictates that they be harvested by hand, with great respect for the environment, in order to preserve their quality and freshness. These mushrooms are distinguished by their firm, white and fragrant flesh, which maintains a delicate flavour but is rich in aromatic notes, perfect for enhancing any recipe, from the simplest to the most refined dishes.
