Dried

Black-eyed peas (Vigna unguiculata)

After harvesting, we dry them naturally, then pack them by hand into jars or bags, ready for long-term storage. Before cooking, we recommend soaking them for at least 6 hours, preferably overnight, to ensure even cooking and perfect texture. They are very versatile in the kitchen: excellent in soups, warm salads or as a side dish with white meat and fish. They go very well with extra virgin olive oil, garlic, onion, herbs and seasonal vegetables.

The cowpea is a hardy variety with pods measuring 25-30 cm in length and creamy white seeds with a characteristic black spot (‘eye’). It is drought-resistant and grows well in dry soil. We sow them in spring and harvest them when fully ripe to ensure quality and shelf life.
