Dried

Ruviotto Bean (Phaseolus vulgaris)

After harvesting, we leave them to dry naturally, then pack them by hand into jars or bags. Before cooking, we recommend soaking them for at least 6 hours, preferably overnight. In the kitchen, Ruviotto is perfect for soups, stews, warm salads or traditional peasant dishes. Its full flavour goes well with extra virgin olive oil, vegetables, aromatic herbs and cereals such as spelt and barley.

We cultivate Ruviotto beans following Piedmontese agricultural traditions. It is an ancient and rustic variety, with small, plump seeds streaked with brown on a beige background, very tasty and ideal for traditional dishes. It prefers dry, well-exposed soil and grows well without the need for abundant irrigation.
We sow it in spring and harvest it only when fully ripe to ensure quality, flavour and long shelf life.
