Stone-ground corn flour

After harvesting, we dry the corn cobs and then we shell them, with care and patience, to preserve each grain as best as possible. Once dried, the grains are stone-ground in small batches to obtain a coarse flour that is fragrant and rich in flavour. Our corn flour is ideal for making traditional, rustic and flavourful polenta, but it is also suitable for baked goods such as bread, biscuits and savoury pies. Its intense and authentic taste pairs perfectly with aged cheeses, stewed vegetables, mushrooms, legumes or full-bodied sauces, for simple and authentic dishes that reflect the land they come from.

We cultivate corn with care and respect for the land, choosing sunny, fertile and well-drained soils, ideal for growing this ancient and prized variety. The cobs are distinguished by their elongated shape and large, glassy, intense yellow kernels. This corn is appreciated for its authentic, rustic and slightly sweet flavour, and for its cultural value linked to the tradition of polenta production.
We sow it in spring and harvest it when fully ripe, when the cobs are dry and rich in aroma. After harvesting, the kernels are dried naturally and stone-ground to obtain a fragrant, nutritious flour that can be easily stored over time.
