Pea lentils (Lens esculentum)

After harvesting, we leave our Occhio di Pernice lentils to dry naturally and then pack them by hand, carefully and simply, into jars or bags. Although they are among the most digestible legumes, we recommend soaking them for 2-4 hours to further improve their cooking. Occhio di Pernice lentils are ideal for light and tasty dishes: excellent in soups, warm salads, vegetable patties or as a protein side dish. Their rounded and delicate flavour goes well with whole grains, seasonal vegetables and spices such as bay leaf, rosemary or cumin.

We cultivate Occhio di Pernice lentils with care and respect for the environment, choosing light, well-drained and sunny soils that are ideal for their growth. This traditional variety, typical of the Mediterranean basin, is particularly appreciated for its high nutritional value, tender texture and full, harmonious flavour. The seeds are small, round, light brown in colour with a characteristic dark spot in the centre, reminiscent of a partridge’s eye.
We sow them in spring and harvest them when fully ripe, following nature’s timing, to obtain a quality product that is rich in flavour and naturally long-lasting.
