You will need
- 1 pork tenderloin 300 g
- 4-5 apricots in syrup Prunotto Mariangela organic farm
- 100 ml of light beer
- 2 tablespoons apricot extra jam Prunotto Mariangela organic Farm in Alba
- 3 tablespoons butter
- 2 small sprigs of rosemary
- 1 tablespoon flour
- 1 tablespoon sugar
- salt
- pepper
How to proceed
– Cut the pork fillet in 10-12 slices , place between 2 sheets of baking paper and assotigliare as much as possible with the help of meat tenderizer
– Dissolve in a large frying pan 2 tablespoons of butter, flour just as soon as the slices of meat and fry them together with a sprig of rosemary from both sides for about 2 minutes , add salt and pepper
– Remove the meat from the pan and keep warm
– Pour into a pan of the beer and raise the funds , using a wooden spoon or silicone , add the apricot jam and stir, pour the rest of the beer and cook the sauce for a few minutes , until it is reduced more or somewhere in the middle , put it aside
– Cut the apricots in half, remove the stones and cut into wedges
– Add the rest of the butter in a pan , apricots, another sprig of rosemary and sugar , sauté for a few minutes
– Divide the apricots in two dishes , arrange the scallops around the pork and drizzle with the sauce
