You will need
2 1/2 lbs. Lima beans
1/2 lb. mushrooms, sliced
3 cloves garlic, minced
1 1/2 tsp. oregano, divided
1 1/2 tsp. dry basil, divided
1 1/2 c. bread crumbs
1 lg. onion, chopped
4 lg. tomatoes
10 tbsp. butter, divided
1 tsp. salt
1/3 c. parmesan cheese
How to prepare
Take the beans in cold water for a night.
Steam beans until just tender. Rinse in cold water, set aside. Cut tomatoes in thin wedges, set aside.
Melt 4 tablespoons of butter in large fry pan over medium high heat. Add mushrooms, onions and 2/3 of garlic. Cook, stirring, until onion is soft and liquid is evaporated. Stir in 1 teaspoon each of oregano, basil and salt. Combine mushroom mixture with beans and tomatoes and pour into 3 quart baking dish.
Melt remaining butter, stir in remaining garlic, herbs, crumbs and cheese. Sprinkle over beans, cover and bake 20 minutes at 400 degrees. Uncover and bake 5 more minutes
